DELICIOUS + EASY NICECREAM!!
I have been trying to perfect the most foolproof nice cream recipe for the past few months.
I wanted something easy, with the perfect texture and something practically anyone could do at home without a machine.
Here's the problem though, I'm not a fan of banana. It's just....eh, to me.
Majority of the nicecream recipes you find online call for banana as the base and people seem to go nuts for them. Personally, though, I tried the banana way from 100 different angles and I still find the flavor too banana-y and wanted something that tastes more like actual ice cream.
And ya'll, I really wanted the bananas to work. I wanted so bad to crack the code on making banana nice cream that doesn't taste like banana and I failed tremendously. These recipes usually turned into little treats for Ollie :) He goes bonkers for bananas.
Cue: COCONUT milk
Coconut milk totally changed the nicecream game in the Hamilton household. I trialed a recipe a few times last weekend and trust me, it is PERFECT. I love coconut, but the vanilla and maple/honey cancel it out leaving a dreamy vanilla cream situation.
I think it also helped with the texture. I wasn't left with a puree or popsicle but instead, perfect ice cream texture.
Here's what you'll need as far as tools go:
Yes, it is THAT easy. No machine. No churning.
And just look at all this 'nilla goodness.
Seriously, I can't tell you why, but hot chai tea tastes HEAVENLY with this. I don't make the rules :)
I got a little creative and added a dash of cinnamon and nutmeg. DELISH.
Okay, so here's the scoop!
haha, see what I did there?
One 16 oz. of can full fat coconut milk(refrigerated)
1/2 cup of honey (or maple syrup to make it vegan)
1 tablespoon vanilla extract
Whisk ingredients together in a bowl until combined
place in freezer for 30 minutes
place in freezer again for 30 minutes
Whisk every 30 minutes for about 2-3 hours
extras: I ate my second bowl with a few dashes of nutmeg and cinnamon. The strong vanilla flavor went great with it.
And, voila! There you have it.
Perfect, consistent, ice cream textured nicecream!
